I try to time the making of it with the moments that I have a large chunk of fresh feta. I still can't believe that a soup with such few and simple ingredients proves to be so delicious, time and time again. My husband took us (our three grown daughters and myself) to Crete the summer of 2008. Specifically, to Kastelli, where his father used to run an oil factory. While there, we visited with the family of the gentleman who used to be the chemist at the factory.
